These easy-to-make treats are inspired by the traditional Irish soda bread but in a convenient, muffin-sized package. Think scones meet Irish Soda Bread and these muffins are born! And if you love a little mystery with your baking, they pair perfectly with a cozy night in and a good book…perhaps one featuring an amateur sleuth with Irish roots? 😉

Taryn O’Kelly, the star of my cozy mystery romance series, might be solving murders instead of baking muffins, but with her Irish-American heritage and love for all things delicious, I like to think she’d approve of this recipe. Irish Soda Muffins Recipe

Ingredients:

  • 2 ½ cups all-purpose flour
  • 1/3 cup granulated sugar
  • ¼ teaspoon baking soda
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup buttermilk
  • 1 egg
  • ¼ cup melted butter
  • ¼ cup olive oil
  • ¾ cup Craisins or currants
  • 1 ½ teaspoon caraway seeds
  • green decoration sugar for a fun festive topping!

Instructions:

  1. Preheat oven to 400°F. Line a muffin tin with paper liners or lightly grease it or use a silicone baking tins.
  2. In a large bowl, whisk together the flours, sugar, baking soda, baking powder, caraway seeds, and salt.
  3. Add the buttermilk, egg, melted butter, oil, and Craisins. Stir until combined. Do not over mix!
  4. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. The dough will be thick and sticky.
  5. Sprinkle tops with green decorative sugar.
  6. Bake for 12- 15 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool slightly, then enjoy with butter, jam, or a drizzle of honey.
